Why we're starting a grassfed A2A2 dairy and creamery in Upstate New York, and what we'll be sharing here as we build it.

Welcome to Larkindale Farms. We're a family building a small dairy and on-farm creamery in Upstate New York — and this journal is where we'll share the whole journey, from the first fence post to the first bottle on your doorstep.

What we're building

Our plan is simple to say and a lot of work to do: certified-organic, 100% grassfed milk from A2A2 cows, gently pasteurized and bottled in glass right here on the farm. Creamline milk, farmstead cheese, butter and soft-serve — and a home-delivery route so it reaches your fridge within a day or two of milking.

Why we're doing it this way

Grass, not grain. Cows on pasture all season and our own organic baleage in winter.

A2A2 cows. Every cow genetically tested to produce only A2 beta-casein.

Small and local. Milk processed where it's produced, by the people who care for the cows.

A family farm. Parents, kids, grandma and uncle all have a hand in it.

What you'll find here

We'll post updates as we go: choosing our herd, building the creamery, the permits and paperwork nobody talks about, recipes, and what a day on a grassfed dairy actually looks like. We'll be honest about what goes right and what doesn't.

How you can help

The best thing you can do right now is join the delivery waitlist. Your ZIP code and what your household would order help us decide where the route goes first and what we make. It's free, and founding members hear everything first.

Thanks for following along. We're glad you're here.
