Larkindale Dairy · The herd

Jersey and Brown Swiss cows, on grass.

Larkindale Dairy is our herd and the farm that cares for it. We're building it slowly and carefully: certified organic, 100% grassfed, and every cow tested A2A2.

How we farm

What the herd will look like

Jersey and Brown Swiss

Breeds known for rich milk and for doing well on pasture. About 70% Jersey, 30% Brown Swiss, all registered.

A2A2, tested cow by cow

Every cow is genotyped so the herd produces only A2 beta-casein. We'll keep the test records.

100% grassfed, certified organic

Pasture through the grazing season and organic baleage from our own fields in winter. No grain.

A barn built for cows

A compost-bedded pack barn with soft footing and a robotic milker, so each cow milks on her own schedule.

Our own feed

Hay and baleage come from Larkindale Forage, grown on our family's land.

Calves and heifers

We raise registered heifers to grow and renew the herd.

Timing

When will the cows arrive?

We're finalizing the barn plans and herd timeline now. We'll announce the arrival of our first cows in the Farm Journal and to everyone on the creamery waitlist. Until our own herd is milking, the Creamery will bottle organic grassfed milk from partner farms near us, and the label will always say where it came from.
